Hello and welcome to my little vegetable haven.

I truly love vegetables. I receive joy from a plate of well roasted carrots. Giant cauliflowers make me giddy. Hiding vegetables in desserts feels devious. Sometimes I try more extravagant recipes, because they are fun and I like the creativity. But most of the time I just want to highlight the beauty of the vegetable. I want to allow the vegetables to sing.

This blog began in its original form on January 18, 2014. I had just started my Junior year of college and needed a way to motivate myself to eat healthy as I began the journey of cooking for myself for the first time in my life. I knew the dangers of unrestricted eating from an unfortunate Freshman 15 from dining hall food. After working hard to lose the gained weight,  I was determined to keep it off.

This led me to create what was then called The Mother Daughter Healthy Food Challenge. The idea was that my mom and I could both post our healthy recipes to keep each other motivated. It proved a very rewarding experience and I loved discovering new veggie filled dishes to try out and then write about my experience.

Some things have changed since I started this blog. I am now a college graduate, trying to maneuver this confusing and wonderful world we live in. I decided it was time for this blog to have a reincarnation of sorts. I wanted to share all the joyful, frustrating and comical cooking experiences I have had and to showcase the magic of vegetables.
